Nel mondo numerose tipologie di vino vengono prodotte con l’impiego parziale o totale di uve sovra mature e/o appassite.
Sono però pochi i prodotti enologici che utilizzano l’appassimento naturale delle uve sulla pianta (Drying On- Vine) e, tra questi, i più conosciuti e commercialmente importanti sono quelli definiti “sweet” o da dessert tra cui il Sauternes, il Tokaj e gli “Ice Wines”, questi ultimi denominati in Italia “Vini del ghiaccio”.
