La qualità dei vini bianchi dipende infatti in larga misura dalle condizioni e modalità in cui si svolgono le operazioni prefermentative. Tra le opzioni che il tecnico deve valutare vi è la possibilità di impiegare sul pigiato, prima della pressatura, preparati enzimatici specifici, allo scopo di facilitare la fuoriuscita del mosto e la sua chiarifica, sfruttando al meglio il potenziale qualitativo racchiuso nell’acino.
