L’utilizzo dei tannini enologici in fase pre-fermentativa, in alternativa o in combinazione con l’anidride solforosa, viene proposto per la loro capacità di prevenire i fenomeni ossidativi sia su mosti provenienti da uve bianche sia su pigiati di uve rosse.
